  • tablespoon olive oil extra virgin 
  • medium onion chopped
  • cloves garlic minced
  • 29 ounce tomatoes diced canned
  • 0.3 cup parsley fresh minced
  • tablespoon optional: dill dried fresh minced
  • pounds shrimp raw frozen thaw deveined peeled (can leave tails on)
  • pinch salt to taste
  • pinch pepper black to taste
  • ounces feta cheese crumbled ()

Directions

  1. Preheat oven to 425°F.
  2. Sauté onions and garlic: Coat the bottom of a large, oven-proof skillet with oil and heat it on medium high heat. Stir in the onions and cook until softened, 3-5 minutes.
