  • tablespoons balsamic vinegar 
  • 0.3 teaspoon pepper black freshly ground
  • teaspoon bottled garlic minced
  • teaspoon butter 
  • 0.3 cup plum preserves 
  • 16 ounce pork loin chops boneless ( 1/)
  • 0.3 cup port wine 
  • 0.8 teaspoon salt divided
  • tablespoons shallots chopped

Directions

  1. Melt butter in a large nonstick skillet over medium-high heat.
  2. Sprinkle pork evenly with 1/2 teaspoon salt and pepper.
  3. Add pork to pan; cook 3 1/2 minutes on each side.
  4. Remove from pan.
  5. Coat pan with cooking spray.
  6. Add shallots and garlic to pan; saut 30 seconds.
  7. Add port and vinegar to pan; cook 30 seconds, stirring occasionally. Stir in remaining 1/4 teaspoon salt and plum preserves; cook for 30 seconds or until smooth, stirring constantly. Return pork to pan; cook 30 seconds or until desired degree of doneness, turning to coat.
  8. Sprinkle with parsley, if desired.
