Ingredients

  • 0.5 teaspoon baking soda 
  •  bananas very ripe mashed
  • 0.5 cup butter 
  • large eggs 
  • servings lemon curd (optional, see recipe)
  • 0.5 cup pecans toasted chopped
  • cups self-rising flour 
  • cup sugar 
  • teaspoon vanilla extract

Directions

  1. Beat 1 cup sugar and butter at medium speed with an electric mixer until creamy.
  2. Add mashed bananas, eggs, and vanilla, beating well.
  3. Combine flour and baking soda; add to banana mixture, beating until just combined. Stir in chopped pecans.
  4. Pour into a greased and floured 8-inch loaf pan.
  5. Bake at 350 for 1 hour or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes; remove from pan, and cool completely on wire rack.
  6. Serve with Lemon Curd, if desired.
