Ingredients

  • 0.5 cup matchstick-cut carrots 
  • teaspoons bottled garlic minced
  • cups brown rice chilled cooked
  • teaspoons sesame oil dark
  • large eggs lightly beaten
  • 0.5 cup green onions sliced
  • tablespoons soya sauce low-sodium
  • 0.3 teaspoon pepper 
  • tablespoon water

Directions

  1. Heat sesame oil in large nonstick skillet over high heat.
  2. Add carrot and next 3 ingredients, and stir-fry until tender.
  3. Add cooked rice; stir-fry 2 minutes. Push rice mixture to sides of pan, forming a well in center.
  4. Add egg to center of pan, and let cook 30 seconds; toss with rice, and stir-fry until egg is cooked. Stir in soy sauce and water; cook until thoroughly heated.
