Ingredients

  • 105 oz tomatoes whole with basil italian-style peeled canned
  • 32 oz chicken broth canned
  • cup basil leaves fresh loosely packed
  •  garlic cloves 
  • tablespoon juice of lemon 
  • teaspoon lemon zest 
  • 16 oz breaded cut okra frozen
  • tablespoons olive oil divided
  • medium onions chopped
  • 0.5 teaspoon pepper 
  • teaspoon salt 
  • teaspoon sugar 

Equipment

  • dutch oven
  • immersion blender

Directions

  1. Saut onions in 2 Tbsp. hot oil in a large Dutch oven over medium-high heat 9 to 10 minutes or until tender.
  2. Add tomatoes and chicken broth. Bring to a boil, reduce heat to medium-low, and simmer, stirring occasionally, 20 minutes. Process mixture with a handheld blender until smooth.
  3. Process basil, next 4 ingredients, 1/4 cup water, and remaining 2 Tbsp. oil in a food processor until smooth, stopping to scrape down sides. Stir basil mixture, sugar, and pepper into soup. Cook 10 minutes or until thoroughly heated.
  4. Meanwhile, cook okra according to package directions.
  5. Serve with soup.
