  • 1.5 cups rice white instant uncooked
  • tsp oil 
  • large bell pepper red chopped
  • lb chicken thighs boneless skinless cut into bite-size pieces
  • 1.3 cups water 
  •  zucchini chopped

Directions

  1. Heat oil in large nonstick skillet on medium-high heat.
  2. Add chicken; cook 3 min., stirring occasionally.
  3. Add water, barbecue sauce and rice. Bring to boil.
  4. Reduce heat to medium-low; sprinkle with pepper and zucchini. Cover. Simmer 10 min.
