  • lb beef flank steak cut into thin strips
  • Tbsp lite catalina dressing kraft
  • tsp cornstarch 
  • 0.8 tsp ground ginger 
  • cups brown rice instant uncooked
  • 0.3 cup planters roasted peanuts dry
  • 16 oz stir-fry vegetables frozen thawed drained
  • 0.3 cup lite soy sauce

Directions

  1. Cook rice as directed on package, omitting salt.
  2. Meanwhile, mix soy sauce, dressing and ginger until blended; set aside. Toss meat with cornstarch; cook and stir in large nonstick skillet sprayed with cooking spray on medium-high heat 3 min. or until done.
  3. Add vegetables and soy sauce mixture; cook and stir 3 min. or until sauce is thickened and vegetables are heated through.
  4. Spoon over rice; top with nuts.
