Ingredients

  • 0.3 teaspoon pepper black freshly ground
  •  fingerling potatoes cut in half lengthwise
  • tablespoons parsley fresh chopped
  • 1.5 tablespoons horseradish prepared
  • 16 small okra pods 
  • teaspoons olive oil 
  • cup bell pepper red cut (1-inch-square)
  • 0.5 teaspoon salt divided
  •  shallots peeled halved
  • pound rump steak boneless trimmed cut into 1-inch cubes
  • 1.5 teaspoons sugar 
  • 1.5 tablespoons whole-grain dijon mustard 
  • tablespoon worcestershire sauce 
  • medium baby squash yellow halved lengthwise cut into 1/2-inch slices ( 2 cups)

Directions

  1. Place potatoes in a saucepan; cover with water. Bring to a boil. Reduce heat, and simmer 15 minutes or until tender; drain. Cool.
  2. Combine parsley and the next 6 ingredients (through black pepper) in a large bowl, stirring well; stir in 1/4 teaspoon salt.
  3. Add potatoes, bell pepper, okra, shallots, beef, and squash; toss well to coat. Cover and chill 1 hour.
  4. Prepare grill.
  5. Thread vegetables and beef alternately onto each of 8 (10-inch) skewers.
  6. Sprinkle kebabs evenly with remaining 1/4 teaspoon salt.
  7. Place kebabs on grill rack coated with cooking spray; grill 10 minutes or until desired degree of doneness, turning occasionally.
