Ingredients

  • lb ground beef 80% lean (at least )
  • serving salt and pepper 
  • 10 oz enchilada sauce red canned
  • oz chilis green chopped canned
  • cup black beans canned rinsed drained (from 15-)
  • oz cheddar cheese shredded
  • cups tortilla chips 
  • serving cheddar cheese shredded
  • serving spring onion sliced
  • serving cilantro leaves fresh
  • serving jalapeno 
  • serving cream sour

Directions

  1. In 12-inch skillet, cook ground beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked.
  2. Drain, if needed. Season with salt and pepper.
  3. Stir in enchilada sauce, green chiles and black beans.
  4. Add 1 1/2 cups Cheddar cheese; cook until cheese is melted.
  5. To serve, place about 1 cup tortilla chips on each serving plate. Divide beef mixture evenly over chips. Top nachos with desired toppings.
  6. Serve immediately.
