There is something genuinely magical about transforming humble sweet potatoes into a hearty, gourmet main dish that feels both comforting and sophisticated. This Beefy Stuffed Sweet Potato recipe is a delightful celebration of textures and flavors, offering a perfect harmony between the earthy sweetness of roasted potatoes and the savory richness of lean ground beef. What makes this dish truly special is its incredible versatility; it is naturally gluten-free and dairy-free, making it an accessible and delicious option for anyone with dietary restrictions without sacrificing any flavor or satisfaction.

Prepared in just forty minutes, this meal is a triumph of efficiency, perfect for busy weeknights when you still want to impress your family or guests. The process begins with microwaving the potatoes until tender, a clever shortcut that saves precious time compared to traditional roasting methods. Once the potatoes are ready, you create a vibrant filling by sautéing a colorful medley of onions, garlic, carrots, and tomatoes, seasoned with aromatic spices like cumin, oregano, and a hint of cayenne for a subtle kick. The addition of lean ground beef elevates the dish, providing a robust protein base that soaks up the savory juices of the vegetables.

The true artistry lies in the assembly, where you scoop out some of the warm potato flesh to mix directly with the beef and vegetable filling, creating a creamy, integrated stuffing that binds everything together beautifully. This technique ensures every bite is packed with flavor and texture. To finish, the dish is plated with a fresh, crisp carrot slaw tossed in cilantro and vinegar, adding a necessary acidity and crunch that cuts through the richness of the beef. With a satisfying balance of macronutrients and a presentation that looks as good as it tastes, this recipe proves that simple ingredients can come together to create something truly extraordinary. Grab your apron and get ready to enjoy a meal that warms the soul.

Directions

  1. Poke each sweet potato a few times and microwave until fork tender, about 10 minutes, rotating about halfway through. Set aside and keep warm.
  2. Combine the chopped carrots, onions, tomatoes, garlic, 2 tablespoons of the vinegar, cumin, 1 teaspoon salt, oregano, cayenne and a few grinds of black pepper in a food processor; pulse until coarsely chopped.
  3. Heat the oil in a large nonstick skillet over medium-high heat, add the vegetable mixture and cook, stirring constantly, until dry, 3 to 4 minutes.
  4. Add 1/4 cup water and cook, scraping up any brown bits with a wooden spoon, until the water evaporates, about 1 minute.
  5. Add the ground beef and cook, stirring and breaking it up into smaller chunks, until browned and cooked through, about 4 minutes.
  6. Remove from the heat.
  7. Split the potatoes in half, scoop out some of the warm flesh and add it to the beef mixture; stir to combine. Divide the potato halves among four plates and generously fill each half with the beef-potato mixture. Toss the shredded carrots with the cilantro, the remaining 1 teaspoon vinegar and 1/4 teaspoon salt in a medium bowl. Divide the carrot slaw among the four plates.
