Ingredients

  •  bay leaf 
  • pound beets 
  • tablespoons parsley fresh chopped
  • tablespoon olive oil 
  • cup onion thinly sliced
  • tablespoon oregano fresh chopped
  • tablespoons red wine vinegar 
  • 0.5 teaspoon salt

Directions

  1. Leave the root and 1 inch of stem on beets, and scrub with a brush. Steam beets and bay leaf, covered, for 30 minutes or until tender. Discard bay leaf.
  2. Drain and rinse beets with cold water.
  3. Drain. Trim off beet roots; rub off skins.
  4. Cut beets into 1/4-inch slices.
  5. Combine beets and onion; arrange on a platter.
  6. Combine parsley and next 4 ingredients (parsley through salt), stirring with a whisk.
  7. Pour dressing over beet mixture.
  8. Sprinkle with pepper, if desired.
