Ingredients

  • large boston lettuce leaves rinsed
  • 15 oz beets drained sliced chopped canned
  • 0.5 teaspoon thyme leaves dried fresh
  • servings salt and fresh-ground pepper 
  • teaspoon ground sumac (see notes)
  • 0.3 cup yogurt plain low-fat
  • tablespoons onion red finely chopped
  • teaspoon sesame seed white black (see notes)

Directions

  1. In a 6- to 8-inch frying pan over medium-high heat, stir or shake white sesame seed until golden, 4 to 5 minutes (don't toast black sesame seed).
  2. Pour into a small bowl.
  3. To sesame seed, add beets, yogurt, onion, sumac, and thyme; mix.
  4. Arrange a lettuce leaf on each plate and mound beet salad equally onto leaves.
  5. Add salt and pepper to taste.
