  • 1.5 pounds beets peeled halved
  • 0.3 teaspoon pepper black freshly ground
  • teaspoon brown mustard seeds 
  •  carrots diced
  • tablespoons cilantro leaves 
  • 0.5 teaspoon cumin seeds 
  • teaspoon ginger minced
  • 0.1 teaspoon ground pepper red
  • tablespoons olive oil extra-virgin
  • tablespoon rice vinegar 
  • 0.1 teaspoon salt 
  • tablespoons shallots minced

Directions

  1. Wrap beets in parchment paper. Microwave at HIGH until tender (about 7 minutes).
  2. Let stand 5 minutes.
  3. Cut into 1-inch pieces.
  4. Heat a saucepan over medium-high heat.
  5. Add olive oil, shallots, mustard seeds, ginger, cumin seeds, and carrot; cook 2 minutes.
  6. Add vinegar, black pepper, salt, and ground red pepper.
  7. Add beets.
  8. Sprinkle with cilantro.
