Ingredients

  • 12 slices bacon 
  • 0.3 cup celery finely chopped
  • tablespoon dijon mustard 
  • large hardboiled eggs peeled coarsely chopped
  • 12 leaf broad-leaf culantro leaves red
  • 0.5 cup mayonnaise 
  • 0.3 cup pimiento stuffed olives green chopped
  • 12 slices sandwich bread white toasted

Directions

  1. Sauté bacon in heavy large skillet over medium heat until brown and crisp, about 8 minutes. Using slotted spoon, transfer bacon to paper towels to drain.
  2. Cut bacon slices crosswise in half.
  3. Combine chopped eggs, celery, and olives in bowl.
  4. Mix in 1/4 cup mayonnaise and mustard. Season with salt and pepper.
  5. Place toast slices on work surface; spread lightly with remaining mayonnaise. Divide egg salad among 6 toast slices.
  6. Place 4 bacon pieces, then 2 lettuce leaves atop egg salad on each. Cover with remaining toast slices, mayonnaise side down.
  7. Cut sandwiches diagonally in half.
