Ingredients

  • cups beef broth 
  • 32 ounce tomatoes whole peeled canned
  • 0.5 teaspoon basil dried
  • 1.3 cups cooking wine dry red
  • tablespoons parsley fresh chopped
  • cloves garlic minced
  •  bell pepper green chopped
  • 1.5 pounds sausage sweet italian
  • small onions chopped
  • 0.5 teaspoon oregano dried
  • servings salt and pepper to taste
  • 16 ounce spinach fettuccine pasta 
  •  zucchini sliced

Equipment

  • frying pan
  • paper towels
  • pot
  • slotted spoon
  • slow cooker

Directions

  1. In a large pot, cook sausage over medium heat until brown.
  2. Remove with a slotted spoon, and drain on paper towels.
  3. Drain fat from pan, reserving 3 tablespoons.
  4. Cook garlic and onion in reserved fat for 2 to 3 minutes. Stir in tomatoes, wine, broth, basil, and oregano.
  5. Transfer to a slow cooker, and stir in sausage, zucchini, bell pepper, and parsley.
  6. Cover, and cook on Low for 4 to 6 hours.
  7. Bring a pot of lightly salted water to a boil. Cook pasta in boiling water until al dente, about 7 minutes.
  8. Drain water, and add pasta to the slow cooker. Simmer for a few minutes, and season with salt and pepper before serving.
