  • tablespoon feta grated crumbled
  • cup vegetables sliced (onion, tomato, and zucchini)
  • serving salt and pepper to taste

Directions

  2. Coat a small nonstick ovenproof pan with cooking spray, and saut veggies over medium heat.
  3. Whisk together the next 3 ingredients (through salt and pepper); pour into pan, and stir until slightly solidified.
  4. Bake 15-20 minutes or until almost firm.
  5. Sprinkle frittata with cheese, and bake until firm; serve.
