  • 0.3 teaspoon pepper black freshly ground
  • cup black beans canned rinsed drained
  • tablespoons olive oil extravirgin
  • 0.3 cup cilantro leaves fresh chopped
  • cup corn kernels fresh ( 2 ears)
  •  garlic clove minced
  • tablespoons juice of lime fresh ( 2 large limes)
  • 0.5 cup rice long-grain
  • teaspoon salt divided
  • cup water

Directions

  1. Combine 1 cup water and 1/2 teaspoon salt in a large, heavy saucepan; bring to a boil.
  2. Add rice to pan. Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed. Fluff with a fork.
  3. Combine remaining 1/2 teaspoon salt, juice, oil, pepper, and garlic in a large bowl.
  4. Add rice and beans; toss to coat.
  5. Let stand 15 minutes or until completely cool. Stir in corn and cilantro.
