  • 15 ounce black beans rinsed drained canned
  • teaspoon chili powder 
  • cup rice long-grain hot cooked
  •  garlic cloves minced
  • 0.3 teaspoon ground coriander 
  • 0.5 teaspoon ground cumin 
  • 0.3 teaspoon ground pepper red
  • ounce cheddar cheese shredded reduced-fat
  • tablespoon olive oil 
  • 0.5 cup onion chopped
  • 0.5 teaspoon oregano dried
  • 0.5 cup bell pepper red chopped
  • 0.5 teaspoon salt 
  • 0.5 cup water

Directions

  1. Heat oil in a medium saucepan over medium heat.
  2. Add onion and bell pepper; cook 5 minutes or until tender, stirring occasionally.
  3. Add garlic; cook 1 minute.
  4. Add water and next 7 ingredients (through beans); bring to a boil. Cover, reduce heat, and simmer 10 minutes or until thoroughly heated.
  5. Place 1/4 cup rice on each of 4 plates; top with 1/2 cup bean mixture.
  6. Sprinkle each serving with 1 tablespoon cheese.
