1 cup rice long-grain cooked ( without salt or fat)
1 teaspoon garlic minced chopped
2 tablespoons bell pepper green chopped
1 Dash ground cumin
1.5 teaspoons jalapeno seeded chopped
0.5 teaspoon olive oil
2 tablespoons onion chopped
2 teaspoons red wine vinegar
0.1 teaspoon salt
0.5 cup tomatoes chopped

Directions
Coat a small nonstick skillet with cooking spray; add oil.
Place over medium heat until hot; add tomato and next 4 ingredients.
Saute 4 minutes.
Add Spicy Black Beans and next 4 ingredients. Cook 10 minutes, mashing beans slightly with the back of a wooden spoon. To serve, spoon bean mixture over rice.
