Ingredients

  • cup spicy black beans 
  • 0.3 cup chicken broth low-sodium undiluted canned
  • cup rice long-grain cooked ( without salt or fat)
  • teaspoon garlic minced chopped
  • tablespoons bell pepper green chopped
  • Dash ground cumin 
  • 1.5 teaspoons jalapeno seeded chopped
  • 0.5 teaspoon olive oil 
  • tablespoons onion chopped
  • teaspoons red wine vinegar 
  • 0.1 teaspoon salt 
  • 0.5 cup tomatoes chopped

  • wooden spoon

Directions

  1. Coat a small nonstick skillet with cooking spray; add oil.
  2. Place over medium heat until hot; add tomato and next 4 ingredients.
  3. Saute 4 minutes.
  4. Add Spicy Black Beans and next 4 ingredients. Cook 10 minutes, mashing beans slightly with the back of a wooden spoon. To serve, spoon bean mixture over rice.
