  • tablespoon agave nectar (nectar)
  • servings pepper black freshly ground
  • cup rice black (preferably Lotus Foods Forbidden Rice)
  • cup edamame frozen shelled thawed
  • cup grape tomatoes halved
  • cup green beans thinly sliced
  • servings kosher salt 
  • 0.3 cup meyer lemon juice 
  • 0.3 cup olive oil extra virgin extra-virgin
  •  spring onion thinly sliced
  • 0.5 cup walnuts 
  • tablespoons citrus champagne vinegar

Directions

  1. Preheat oven to 350°F. Cook rice in a mediumsaucepan of boiling salted water untiltender, 35-40 minutes.
  2. Drain well, spreadout on a plate or a rimmed baking sheet,and let cool.
  3. Meanwhile, spread out walnuts onanother rimmed baking sheet. Toast in oven,tossing once, until fragrant, 8-10 minutes.
  4. Let cool; chop.
  5. Whisk lemon juice, vinegar, and agave ina small bowl.
  6. Whisking constantly, graduallydrizzle in oil. Season vinaigrette with salt.
  7. Toss rice, walnuts, scallions, edamame,tomatoes, green beans, and vinaigrette ina large bowl. Season with salt and pepper.
