Ingredients

  • 3.5 pounds baking potatoes peeled chopped
  •  bacon crumbled cooked
  • tablespoons dijon mustard 
  • tablespoon parsley fresh chopped
  • cup grape tomatoes halved
  •  green onions sliced
  •  hard-cooked eggs chopped
  • 10 servings lettuce leaves 
  • cup mayonnaise 
  • 0.8 teaspoon pepper freshly ground
  • 0.8 teaspoon salt 
  • tablespoons relish sweet

Directions

  1. Bring potatoes and salted water to cover to a boil in a Dutch oven. Boil 5 minutes or until tender.
  2. Drain and cool.
  3. Stir together mayonnaise and next 5 ingredients in a large bowl; add cooked potatoes, tomatoes, green onions, and eggs, tossing gently until well blended. Cover and chill at least 3 hours. Stir in bacon just before serving.
  4. Serve on lettuce leaves.
