Ingredients

  • slices bacon thick chopped
  • oz arugula 
  • slices bread halved
  • tablespoons olive oil extra virgin 
  •  garlic clove 
  • pound heirloom tomatoes assorted cut into wedges
  • teaspoon kosher salt divided
  • tablespoons juice of lemon fresh
  • 0.5 cup mayonnaise 
  • teaspoon pepper divided freshly ground
  •  onion sweet halved sliced

Directions

  1. Preheat oven to 40
  2. Drizzle bread with oil; sprinkle with 1/2 tsp. each kosher salt and pepper.
  3. Bake bread in a single layer in a jelly-roll pan 12 minutes or until golden.
  4. Cook bacon in a skillet over medium heat, stirring occasionally, 10 minutes or until crisp.
  5. Drain on paper towels; reserve 1 Tbsp. drippings in skillet.
  6. Saut onion in hot drippings over medium-low heat 3 to 5 minutes or until tender.
  7. Smash garlic to make a paste.
  8. Whisk together mayonnaise, lemon juice, garlic paste, and remaining 1/2 tsp. each salt and pepper.
  9. Toss together tomatoes, arugula, bacon, onion, and salt and pepper to taste in a large bowl.
  10. Pour mayonnaise mixture over tomato mixture, and toss to coat.
  11. Serve immediately with toasted bread.
