Ingredients

  • cup bran cereal crushed
  • 1.5 teaspoons double-acting baking powder 
  • 0.5 teaspoon baking soda 
  • cup blueberries frozen thawed
  • large eggs 
  • cups flour all-purpose
  • 0.3 cup orange juice fresh
  • tablespoon orange rind grated
  • 0.5 teaspoon salt 
  • cup sugar 
  • 0.5 teaspoon vanilla extract 
  • tablespoons vegetable oil 
  • 0.8 cup water

Directions

  1. Stir together first 5 ingredients in a large bowl; let stand 10 minutes or until cereal softens.
  2. Stir in flour and next 6 ingredients just until dry ingredients are moistened. Gently fold in blueberries.

  4. Bake at 350 for 1 hour or until a long wooden pick inserted in center comes out clean. Cool on a wire rack 10 to 15 minutes; remove from pan, and cool completely on wire rack.
