Ingredients

  • cup blueberries fresh
  • tablespoons brown sugar 
  • slices bread french toasted
  •  garlic cloves 
  • 0.3 cup juice of lemon 
  • 16 ounce pork tenderloins 
  • 0.8 cup rum 
  • servings blueberry salsa 
  • tablespoon onion sweet chopped
  • tablespoon vinegar white

Equipment

  • blender
  • grill
  • kitchen thermometer
  • aluminum foil

Directions

  1. Process first 7 ingredients in a blender or food processor until smooth, stopping to scrape down sides.
  2. Pour mixture into large zip-top plastic freezer bag; add pork. Seal and chill at least 4 hours.
  3. Remove pork from marinade, discarding marinade.
  4. Grill pork, covered with grill lid, over medium heat (300 to 35
  5. to 13 minutes on each side or until a meat thermometer inserted in thickest portion registers 15
  6. Remove from grill. Loosely cover pork with foil; let stand 10 minutes or until thermometer registers 16
  7. Cut pork into slices, and serve over toasted bread. Top with Blueberry Salsa.
