  • teaspoon vegetable oil; peanut oil preferred 
  • tablespoons shallots minced
  • 0.3 cup vegetable broth low fat low sodium,

Directions

  1. Heat the oil in a wok or skillet over high heat.
  2. Add the shallots and saute for 3 minutes.
  3. Add the carrots and stir fry for 3 minutes.
  4. Add the green beans and stir fry for 2 minutes.
  5. Add the bok choy and stir fry for 2 minutes.
  6. Add the broth and simmer for 2 minutes.
  7. Add the soy sauce and serve.
