Ingredients

  • teaspoon pepper black freshly ground
  • 0.5 cup bourbon 
  • 0.5 cup brown sugar packed
  • tablespoons brown sugar packed
  • 0.3 cup nutlike cereal nuggets (such as Grape-Nuts)
  • tablespoons honey 
  • tablespoon soya sauce low-sodium
  • cups onion thinly sliced
  • 0.3 cup pecans chopped
  • 2.3 pound salmon fillet 
  • 0.8 teaspoon salt 
  •  tarragon sprigs 
  •  thyme sprigs 
  • 0.5 cup water 
  • 1.5 teaspoons water

Directions

  1. Place salmon in a 13 x 9-inch baking dish.
  2. Combine onion and the next 8 ingredients (onion through thyme); pour over salmon. Cover and marinate in refrigerator 2 hours, turning occasionally.
  3. Preheat oven to 35
  4. Place cereal and pecans in a baking pan.
  5. Bake at 350 for 7 minutes or until toasted.
  6. Place mixture in a food processor; pulse 4 times or until finely chopped.
  7. Remove salmon from marinade; reserve marinade. Arrange the salmon diagonally on a broiler pan coated with cooking spray.
  8. Sprinkle with 3/4 teaspoon salt.
  9. Combine 2 tablespoons of sugar, honey, and 1 1/2 teaspoons water, stirring with a whisk.
  10. Spread honey mixture over salmon; sprinkle with cereal mixture, gently pressing into salmon.
  11. Bake at 350 for 20 minutes or until fish flakes easily when tested with a fork.
  12. While salmon bakes, place reserved marinade in a small saucepan. Discard tarragon and thyme. Bring marinade to a boil over medium-high heat; cook until reduced to 3/4 cup (about 10 minutes).
  13. Serve sauce with salmon.
