Suggestions

There is nothing quite like the comfort of slow-cooked pulled pork, but this Bourbon-Mango creation elevates the classic dish into something truly spectacular. By marinating a hearty 4-pound pork shoulder in a rich blend of balsamic vinegar, water, and aromatic spices, you set the stage for meat so tender it practically falls apart. The real magic, however, lies in the unique fusion of flavors where smoky chipotle chile powder meets the bright, tropical sweetness of fresh mangos. This recipe cleverly utilizes the fruit in two ways: the pits are included in the initial cooking phase to impart a subtle depth, while the flesh is pureed into a luscious, dark barbecue sauce that coats every shred of pork.

What makes this dish stand out is its bold yet balanced profile. The smokiness of the bourbon whiskey and chipotle chile powder cuts through the richness of the pork, while the reduced mango puree adds a vibrant fruitiness that transforms traditional barbecue sauce into a gourmet glaze. It is a perfect example of how combining unexpected ingredients can result in a harmonious and unforgettable meal. Whether you are hosting a summer barbecue or looking to impress guests with a sophisticated dinner, this gluten-free and dairy-free option is sure to be a crowd-pleaser.

Although the cooking time totals around six hours, the process is remarkably hands-off. You simply let the slow cooker do the heavy lifting, allowing the flavors to meld and the meat to become melt-in-your-mouth delicious. Once the pork has absorbed the fruity barbecue sauce, you are left with a dish that offers a complex interplay of sweet, savory, and smoky notes. Serve it alongside your favorite sides for a main course that feels both indulgent and health-conscious, boasting a satisfying balance of protein and carbohydrates. Get ready to experience the ultimate summer flavor combination that will have everyone asking for the secret ingredient.

Ingredients

  • 0.3 cup balsamic vinegar
  • 24 ounce barbeque sauce
  • teaspoon chipotle chile powder
  • tablespoons ground pepper black
  • teaspoons honey
  • teaspoon kosher salt
  •  mangos
  • pound pork shoulder roast
  • cups water
  • 1.5 fluid ounce jigger bourbon whiskey

Equipment

  • sauce pan
  • blender
  • slow cooker

Directions

  1. Peel the mangos and remove the pits.
  2. Place the pits into a slow cooker, then roughly chop the mango and set aside.
  3. Place the pork shoulder into the slow cooker, and season with the black pepper, kosher salt, and 1 teaspoon chipotle powder; pour in the balsamic vinegar and water.
  4. Cover, and cook on Low 5 to 8 hours until the meat is very tender. Once done, drain the pork, discarding the cooking liquid and mango pits, and shred with two forks.
  5. While the pork is cooking, puree the chopped mango in a blender until smooth, then pour into a saucepan along with the honey, 1 teaspoon chipotle powder, and whiskey. Bring to a simmer. Reduce heat to medium-low, and simmer, stirring frequently until the mango has reduced and darkened slightly, about 10 minutes. Stir in the barbeque sauce, and remove from the heat.
  6. Return the shredded pork to the slow cooker, and stir in the mango barbeque sauce. Cover, and cook on High 1 to 2 hours until the pork absorbs the barbeque sauce.
