Ingredients

  • 0.5 pound belgian endive 
  • medium fennel bulbs halved lengthwise
  • large garlic cloves thinly sliced
  • teaspoons olive oil 
  • 0.3 teaspoon pepper 
  • 0.3 teaspoon salt 
  • cup vegetable broth canned

Equipment

Directions

  1. Trim ends from endive.
  2. Cut endive in half lengthwise; set side.
  3. Heat oil in a large ovenproof skillet over low heat.
  4. Add garlic, and saut 5 minutes or until lightly browned.
  5. Remove garlic with a slotted spoon, and set aside.
  6. Place fennel halves, cut sides down, in skillet, and cook over medium heat for 5 minutes.
  7. Add endive halves, cut sides down, and cook for 3 minutes or until browned.
  8. Add broth, salt, and pepper, and stir to deglaze pan. Cover and bake at 400 for 30 minutes or until tender.
  9. Garnish with fennel fronds, if desired.
  10. Serve with beef, pork, or chicken.
