  • 0.5 teaspoon pepper black
  • 0.8 cup cherry tomatoes chopped
  • large egg whites 
  • large eggs 
  • cups kale drained finely chopped
  • 0.8 teaspoon kosher salt 
  • tablespoons oregano chopped
  • TBSP parmesan grated

Directions

  1. Preheat oven to 375F. In a large bowl, whisk the first 6 ingredients (through oregano).
  2. Lightly coat an 8-inch ovenproof cast-iron or nonstick skillet with cooking spray.
  3. Heat over medium.
  4. Add the kale and tomatoes. Cook, stirring, until hot (about 3 minutes).
  5. Add the eggs and swirl to distribute.
  6. Transfer to the oven and bake until set and hot (about 20 minutes).
  7. Cut in wedges.
