Ingredients

  • 0.3 cup flour all-purpose
  • sprigs thyme leaves fresh
  • cup chicken broth low-sodium
  • tablespoons olive oil 
  • large onion sliced
  • 0.3 teaspoon pepper 
  • 24 oz center-cut pork chops bone-in
  •  golden delicious apples cored halved cut into wedges
  • 0.5 teaspoon salt 
  • large sweet potatoes peeled cut into wedges

Directions

  1. Combine flour, salt and pepper in a large bowl. Dredge chops in seasoned flour, shaking off excess.
  2. Warm oil in a large skillet over medium-high heat.
  3. Add chops and cook until lightly browned, about 2 minutes per side.
  4. Transfer to slow cooker.
  5. Add onion to skillet and cook, stirring often, until softened, about 3 minutes.
  6. Pour in broth, increase heat to high and bring to a boil, stirring to pick up any browned bits on bottom.
  7. Pour over pork chops in slow cooker.
  8. Scatter sweet potatoes and apples around chops.
  9. Add thyme, cover and cook on low until tender, about 3 hours, or on high for 1 1/2 hours.
