  • tablespoon dijon mustard 
  • 0.5 cup less-sodium chicken broth fat-free
  • tablespoon ginger fresh peeled chopped
  • 0.3 cup peach jelly 
  • pound pork tenderloin trimmed cut into 1/2-inch medallions
  • tablespoon olive oil 
  • 0.1 teaspoon pepper 
  • 0.5 teaspoon salt

  1. Pound pork to 1/4-inch thickness.

  8. Add pork to pan; cook 1 minute or until thoroughly heated.
