  • 0.5 cup bean sprouts fresh
  • 0.5 cup green beans trimmed halved
  • 1.3 cups julienne-cut jicama peeled
  • 0.3 cup juice of lime fresh
  • 0.5 cup mangos diced peeled
  • 0.3 cup chunky peanut butter natural-style
  • 1.5 cups pineapple diced
  • 0.5 teaspoon salt 
  • 0.3 cup sugar 
  • tablespoon thai chiles red minced seeded ( 2 chiles)
  • 1.5 ounces fried tofu cut into 1/2-inch strips

Directions

  1. Combine sugar and juice in a small bowl, stirring with a whisk.
  2. Add peanut butter, chiles, and salt; stir with a whisk until well combined.
  3. Cook green beans in boiling water 4 minutes or until crisp-tender.
  4. Drain and plunge beans into ice water; drain.
  5. Combine beans, pineapple, and remaining ingredients in a large bowl.
  6. Drizzle with dressing.
