  • 0.8 teaspoon pepper black divided freshly ground
  • 0.3 cup cilantro leaves fresh chopped
  • cup jicama peeled coarsely chopped
  • 1.8 cups mangos diced peeled ( 1 large)
  • 0.5 cup mango chutney chopped
  • tablespoons olive oil 
  • 0.3 cup red wine vinegar 
  • cups gourmet salad greens 
  • 0.8 teaspoon salt divided
  • 16 ounce chicken breast halves boneless skinless

Directions

  1. Preheat broiler.
  2. Combine chutney, vinegar, oil, 1/2 teaspoon salt, and 1/2 teaspoon pepper.
  3. Brush 1/4 cup chutney mixture evenly over chicken; sprinkle with 1/4 teaspoon salt and 1/4 teaspoon pepper.
  4. Place chicken on a broiler pan that has been coated with cooking spray. Broil 6 minutes on each side or until done.
  5. Combine the remaining chutney mixture, greens, mango, and jicama; divide salad evenly among plates.
  6. Cut chicken into 1/2-inch-thick slices, and arrange over salad.
  7. Sprinkle with cilantro.
