Ingredients

  • 0.3 teaspoon pepper black freshly ground
  • tablespoons mint leaves fresh chopped
  •  garlic cloves halved
  • tablespoon honey 
  • 12 ounce lamb rib chops trimmed ()
  • cup mangos diced ripe peeled ( 2)
  • tablespoons pinenuts toasted
  • tablespoon rice wine vinegar 
  • 0.3 teaspoon salt 
  • large shallots minced peeled

Directions

  1. Preheat broiler.
  2. Combine first 6 ingredients in a medium bowl. Cover and chill.
  3. Rub chops with garlic, salt, and pepper.
  4. Place chops on a broiler pan coated with cooking spray. Broil 4 to 5 minutes on each side or until desired degree of doneness.
  5. Serve with salsa.
