  • 0.3 teaspoon pepper black
  • 1.5 tablespoons butter softened
  • tablespoon cilantro leaves fresh chopped
  • 0.3 teaspoon bottled ground ginger fresh (such as Spice World)
  • teaspoon jalapeno minced seeded
  • 0.5 teaspoon lime rind grated
  • 24 ounce snapper white red firm
  • 0.8 teaspoon salt divided

Directions

  1. Combine first 5 ingredients in a bowl. Stir in 1/4 teaspoon salt. Cover and chill.
  2. Heat a large nonstick skillet over medium-high heat.
  3. Sprinkle both sides of fish with the remaining 1/2 teaspoon salt and black pepper. Coat pan with cooking spray.
  4. Add fish to pan; cook 3 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness.
  5. Place 1 fillet on each of 4 plates, and top each serving with 1 1/2 teaspoons butter mixture.
  6. Serve with lime wedges, if desired.
