  • cups brown rice cooked
  • cup meat from a rotisserie chicken cubed cooked
  • tablespoons flat parsley chopped
  •  apples i use 2 granny smith apples diced
  • 0.5 bunch green onions chopped
  • tablespoons juice of lemon 
  • tablespoons olive oil 
  •  bell pepper red chopped
  • servings salt and pepper 
  • 0.5 cup walnut pieces

  1. In a mixing bowl, combine cooked rice with all other ingredients. Toss mixture lightly.
  2. Serve at room temperature or chilled.
