  • cup basil leaves packed chopped (1 large bunch)
  • servings pepper black freshly ground
  • cup texmati brown rice 
  • teaspoons kosher salt divided
  • tablespoon olive oil good
  • 0.3 cup rice wine vinegar 
  • teaspoons sugar 
  • pound tomatoes ripe

Directions

  1. Bring 2 1/4 cups water to a boil and add the rice and 1 teaspoon of the salt. Return to a boil, cover, and simmer for 30 to 40 minutes, until the rice is tender and all the water is absorbed.
  2. Transfer the rice to a bowl.
  3. Whisk together the vinegar, sugar, olive oil, remaining teaspoon of salt, and a pinch of pepper.
  4. Pour over the rice.
  5. Add the tomatoes and basil.
  6. Mix well and check the seasonings.
  7. Serve at room temperature.
