  • lb ground beef 80% lean (at least )
  • cup onion chopped
  • cup bell pepper green chopped
  • cloves garlic finely chopped
  • 16 oz mild cheddar cheese thick
  • 15 oz tomato sauce organic canned
  • cup beef broth flavored (from 32-oz carton)
  • 0.3 cup creamy peanut butter 
  • 0.3 cup semi chocolate chips 
  • small chipotles in adobo seeded finely chopped (from 7-oz can)
  • tablespoons chili powder 
  • teaspoons ground cumin 
  • 15 oz black beans rinsed drained canned
  • 12 oz corn frozen

Directions

  1. In 5-quart Dutch oven, cook beef, onion, bell pepper and garlic over medium heat 8 to 10 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
  2. Stir in salsa, tomato sauce, broth, peanut butter, chocolate chips, chipotle chile, chili powder and cumin.
  3. Heat to boiling; reduce heat. Cover and simmer 10 minutes, stirring occasionally. Stir in beans and corn; simmer uncovered 10 to 15 minutes, stirring occasionally, until desired consistency.
