  • tablespoon vegetable oil 
  • cup onion chopped
  • cup bell pepper red yellow chopped
  • cups rotisserie chicken cut cubed (from 2- to 2 1/2-lb chicken)
  • cup chicken broth (from 32-oz carton)
  • tablespoon chili powder 
  •  sauce of the chicken from the turbo broiler 
  • 30 oz pinto beans drained canned
  • 28 oz canned tomatoes crushed undrained canned
  • 14.5 oz tomatoes diced undrained canned
  • 0.5 cup celery sliced
  • 0.5 cup cheese blue crumbled

Directions

  1. In 3-quart saucepan, heat oil over medium-high heat. Cook onion and bell pepper in oil about 5 minutes, stirring occasionally, until crisp-tender.
  2. Stir in remaining ingredients except celery and blue cheese.
  3. Heat to boiling; reduce heat to medium-low. Simmer uncovered 10 to 15 minutes, stirring occasionally.
  4. Serve topped with celery and blue cheese.
