Ingredients

  •  butternut squash halved seeded
  • tablespoon brown sugar dark
  • tablespoon brown sugar light
  • tablespoon olive oil 
  • 0.3 teaspoon salt 
  • tablespoons simple syrup glaze 
  • 20 servings cheesecloth 
  • 20 servings cheesecloth

Directions

  1. Preheat oven to 40
  2. Brush cut sides of squash with oil.
  3. Sprinkle with salt and light brown sugar.
  4. Place on a baking sheet cut sides down.
  5. Bake at 400 for 30 minutes or until soft. Cool 30 minutes.
  6. Scoop out pulp into bowl of a food processor. Process squash, Simple Syrup, and dark brown sugar until pureed.
  7. Line a fine wire-mesh strainer with cheesecloth.
  8. Place strainer over a bowl. Spoon puree into strainer; press through cheesecloth. Discard solids.
