Ingredients

  • medium carrots grated peeled
  • 16 ounce coleslaw mix 
  •  ears corn fresh
  • 0.5 cup cilantro leaves fresh chopped
  • medium spring onion thinly sliced
  • 0.3 cup orange juice concentrate frozen thawed
  • medium bell pepper red cored stemmed cut into thin strips
  • 0.3 cup rice vinegar 
  • 0.3 cup vegetable oil

Directions

  1. Whisk orange juice concentrate, rice vinegar, and canola oil in small bowl. Season with salt and pepper. DO AHEAD Dressing can be made 1 day ahead. Cover and refrigerate.
  2. Combine slaw mix, corn kernels, carrots, red bell pepper strips, sliced green onions, and chopped cilantro in large bowl. Toss with enough dressing to coat. Season slaw to taste with salt and pepper.
  3. Let stand 15 minutes for flavors to blend. Toss again and serve.
