Ingredients

  • 1.5 teaspoons cajun spice 
  • 32 oz cannellini beans drained and rinsed canned
  • 14.5 oz canned tomatoes diced canned
  • rib celery stalks chopped
  • 1.5 cups chicken broth 
  • 2.3 lb chicken thighs 
  •  garlic clove chopped
  • medium size bell pepper green chopped
  • 16 oz okra frozen thawed sliced
  • large onion chopped
  • teaspoon salt 
  • 16 oz andouille smoked cut into 1/2-inch slices

Directions

  1. Preheat oven to 40
  2. Cook sausage in a large cast-iron Dutch oven over medium heat, stirring occasionally, 4 to 5 minutes or until browned.
  3. Remove sausage with a slotted spoon, and drain on paper towels, reserving drippings in Dutch oven.
  4. Sprinkle chicken with salt. Cook chicken in hot drippings over medium-high heat 2 to 3 minutes on each side or until browned.
  5. Remove from Dutch oven.
  6. Add onion and next 3 ingredients to Dutch oven, and cook, stirring often, 5 minutes or until onion is tender.
  7. Add beans, next 4 ingredients, chicken, and sausage; cover with lid.
  8. Bake, covered, at 400 for 40 minutes or until bubbly. If desired, sprinkle with Toasted Herbed Breadcrumb Topping.
