Ingredients

  • 0.3 cup butter 
  • tablespoon cajun spice 
  • pounds chicken breast 
  • 0.3 teaspoon basil dried
  • oz mushrooms fresh
  • 0.3 teaspoon garlic powder 
  • small bell pepper green thinly sliced
  • slices spring onion light sliced (white and green parts only)
  • servings spring onion chopped
  • 1.5 cups half and half 
  • 0.3 teaspoon lemon pepper 
  • 12 ounces pasta uncooked
  • small bell pepper red thinly sliced
  • 1.3 teaspoons salt divided

Directions

  1. Prepare pasta according to package directions.
  2. Sprinkle chicken evenly with Cajun seasoning and 1 tsp. salt. Melt 1/4 cup butter in a large nonstick skillet over medium-high heat; add chicken, and saut 5 to 6 minutes or until done.
  3. Remove chicken.
  4. Add bell peppers, mushrooms, and green onions to skillet, and saut 9 to 10 minutes or until vegetables are tender and liquid evaporates.
  5. Return chicken to skillet; stir in half-and-half, next 3 ingredients, and remaining 1/4 tsp. salt. Cook, stirring often, over medium-low heat 3 to 4 minutes or until thoroughly heated.
  6. Add linguine; toss to coat.
  7. Garnish, if desired, and serve immediately.
  8. *1/2 (16-oz.) bag frozen sliced green, red, and yellow bell peppers and onion may be substituted. For testing purposes only, we used Birds Eye Pepper Stir-Fry.
