  • tablespoon double-acting baking powder 
  • tablespoon butter melted
  • 8.8 ounce regular corn cream-style canned
  • large eggs lightly beaten
  • large egg white lightly beaten
  • 0.5 cup flour all-purpose
  • cup buttermilk low-fat
  • ounces crawfish tail meat cooked coarsely chopped
  • 0.5 teaspoon salt 
  • teaspoons all that jazz seasoning 
  • ounces sharp cheddar cheese shredded
  • 1.5 cups cornmeal yellow

Directions

  1. Preheat oven to 37
  2. Coat a 9-inch cast-iron skillet with cooking spray.
  3. Place in a 375 oven for 10 minutes.
  4. Lightly spoon flour into a dry measuring cup; level with a knife.
  5. Combine flour and next 4 ingredients (flour through salt) in a large bowl.
  6. Combine crawfish and remaining ingredients in a medium bowl; stir well with a whisk.
  7. Add to flour mixture, stirring until moist.
  8. Pour batter into preheated pan.
  9. Bake at 375 for 35 minutes or until a wooden pick inserted in center comes out clean.
