  • teaspoon cajun spice 
  • cup milk fat-free
  •  garlic clove minced
  • 0.5 cup green onions sliced
  • 0.5 cup tasso ham minced
  • tablespoon olive oil 
  • cup onion chopped
  • cup quick-cooking grits uncooked
  • 0.3 teaspoon salt 
  • cup sharp cheddar cheese shredded
  • 1.3 pounds shrimp peeled
  • tablespoon butter unsalted
  • 2.3 cups water divided

Directions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add tasso; saut 2 minutes or until edges are golden.
  3. Add onion; saut 2 minutes.
  4. Add garlic; saut 1 minute.
  5. Add shrimp to pan, sprinkle with Cajun seasoning, and cook 3 minutes, turning once.
  6. Add 1/4 cup water, scraping pan to loosen browned bits.
  7. Remove from heat; add butter, stirring to melt. Cover and keep warm.
  8. Bring milk, salt, and 2 cups water to a boil over medium-high heat. Reduce heat. Gradually add grits, and cook until thick and bubbly (about 5 minutes), stirring constantly with a whisk.
  9. Remove grits from heat; add cheese, stirring with a whisk until cheese melts.
  10. Spoon grits evenly onto 6 plates. Top evenly with shrimp, ham mixture, and green onions.
