  • 24 ounce chicken thighs ()
  • 1.5 cups whole-kernel corn frozen thawed
  •  garlic cloves minced
  • teaspoon ground cumin 
  • teaspoons olive oil 
  • small onion chopped
  • teaspoon salt 
  • cups baby squash chopped

Directions

  1. Heat oil in a Dutch oven over medium-high heat.
  2. Add chicken; cook 15 minutes, turning to brown on all sides.
  3. Sprinkle cumin, salt, and pepper over chicken.
  4. Add onion and garlic; cook 2 minutes, stirring occasionally.
  5. Add squash and remaining ingredients. Cover and cook 20 minutes or until chicken is done and vegetables are tender, stirring occasionally.
