Ingredients

  • slices bacon chopped
  • 0.5 cup bell pepper red chopped
  • bag potatoes diced refrigerated with onions cooked (1 lb 4 oz)
  • teaspoon lawry's seasoned salt 
  • cups rotisserie chicken cut chopped (from 2- to 2 1/2-lb chicken)
  • oz cheddar cheese shredded
  • tablespoons spring onion chopped

  • slotted spoon

Directions

  1. In 12-inch nonstick skillet, cook bacon over medium heat 3 to 4 minutes, stirring occasionally, until crisp.
  2. Remove bacon with slotted spoon, reserving drippings in skillet.
  3. Drain bacon on paper towels.
  4. Stir bell pepper, potatoes and seasoned salt into drippings. Cover; cook over medium heat 14 to 16 minutes, stirring occasionally, until potatoes are golden brown.
  5. Stir in chicken. Cover; cook 2 to 3 minutes or until hot. Top with cheese, bacon and onions. Cover; cook 1 to 2 minutes or until cheese is melted.
