Ingredients

  • 300 ml milk whole
  • 300 ml single cream 
  •  vanilla pod with seeds scraped out and reserved halved
  • large egg yolk 
  • 50 brown sugar 
  • 100 ml calvados

  1. Heat milk, cream, vanilla pod and the vanilla seeds to a boil.
  2. Remove from the heat and leave to infuse for 20 mins, then discard the vanilla pod.
  3. Whisk the egg yolks and sugar together until pale.
  4. Add to the milk mixture and whisk to combine. Cook very gently until thickened when its ready, the custard should coat the back of a spoon.
  5. Remove from the heat and add the Calvados.
  6. Serve warm or cold.
