Ingredients

  • teaspoon vegetable oil 
  • 0.5 cup bell pepper red chopped
  • 0.5 teaspoon brown sugar packed
  • tablespoon balsamic vinegar 
  • ounces camembert cheese cut cubes plus extra to put on top 
  • tablespoons spring onion chopped
  • tablespoon pistachios chopped
  • 48  fruit cocktail assorted

Directions

  1. Heat oven to 350°F.
  2. Heat oil in 10-inch nonstick skillet over medium heat. Cook bell pepper in oil 8 to 10 minutes, stirring occasionally, until tender. Stir in brown sugar and vinegar. Cook 1 to 2 minutes or until pepper is glazed.
  3. Meanwhile, place cheese in ungreased decorative ovenproof plate or shallow ovenproof serving bowl.
  4. Bake 10 to 12 minutes or until soft.
  5. Spoon bell pepper mixture over cheese.
  6. Sprinkle with onions and nuts.
  7. Serve with crackers.
