Ingredients

  • 10 medium apples 
  • teaspoons cinnamon 
  • cup plus light
  • 0.3 teaspoon food coloring red
  • cups sugar 
  • 1.5 cups water 
  • 10  frangelico 
  • 10  frangelico 

Equipment

  • baking sheet
  • sauce pan
  • plastic wrap
  • double boiler
  • wooden skewers

Directions

  1. Wash and dry apples; remove stems. Insert wooden skewers into stem end of each apple. Set aside at room temperature.
  2. Combine sugar, water, syrup, and cinnamon extract in a heavy saucepan; stir well. Bring to a boil; cover and cook 3 minutes. Uncover and continue cooking, without stirring, until mixture reaches soft crack stage (290).
  3. Add food coloring, mixing well.
  4. Transfer syrup to top of a double boiler.
  5. Place over boiling water, and quickly dip apples in syrup; allow excess to drip off.
  6. Place apples on lightly greased baking sheets to cool. To store, wrap tightly in plastic wrap.
